THE WINERY
HeyDay Corporation has engaged the Botter family in a special joint venture. Botter produces custom blends of high quality according to the lofty specifications of HeyDay Corporation. Botter owns a significant winery in Fossalta di Piave, near the Piave River northeast of Venice. In addition to selling wine, Botter provides organic grape juice concentrate to its clients in Germany. They own the La di Motte estate, just a few kilometers from the winery. Botter sells wine throughout Europe, Asia and the U.S.A.
The wines selected by HeyDay Corporation are custom blends, bottled exclusively for them. Botter is involved in several organic projects, such as Era wines, some in conjunction with the Volpi winery in Tortona. The soft slopes in the Piave plain and its soil, rich in minerals, provide an excellent venue for viticulture. The grapes come primarily from family-owned vineyards close to the border with Friuli-Venezia-Giulia. The Botters work not only with traditional, local varietals, such as Prosecco, but also with international vinifera, such as Sauvignon, Merlot, and Cabernet.

VINEYARD / VINIFICATION
About 175 hectares at an altitude of 350 mt above sea level where soil is calcareous-clayey.
Growing of grapes without use of any pesticides or chemical agents. Hand-made harvest in the second half of September. The must is divided from skins immediately and then passed into a steel tank where it completes its fermentation for about 8/10 days
at a controlled temperature of 18°C. Afterwards, the wine is stored in a special tank with the addition of must which has the same
alcohol content. The wine is left for a new fermentation till it gets the desired over-pressure (5 atmospheres), It is filtered again before
bottling.

THE VINES
Prosecco may be still, crackling, or fully sparkling. This ancient Roman varietal can produce wines that are either sweet or dry. The most acclaimed and popular wine is the sparkling version. The best Proseccos come from Valdobbiadene and Conegliano, a
town famous for its school of wine studies.

THE WINE
This fine Prosecco comes from hilly vineyards around Treviso in Northeastern Italy not far from Venice. Prosecco2 is a fully sparkling dry white wine made entirely from ancient Prosecco grapes. It is a seductive wine made by the Charmat process. Prosecco
has a distinct hint of almonds and fruit. It is long on finesse and is perfect for toasting. The fragrance has nuances of crusty bread. Prosecco is very popular in Italy. It represents good value. With peach syrup, it makes a wonderful Bellini. With raspberry syrup, it makes a beautiful Lampone. Try it with cassis for a superb Kir Royale. It is customary to pour sparkling Prosecco into a carafe, so that the wine may be drunk with the entire meal. Prosecco2 is the perfect aperitif.

Characteristics
Pale light yellow colour, with fine perlage. Delicately fruity, slightly aromatic bouquet .Well balanced and light body. Harmonic at the taste.

Food Affinities
Excellent as an aperitif, it is a perfect pairing to appetizers and delicate first courses. Also ideal with fish and shellfish.
