Sparkling white wine of extraordinary brilliance made from Chardonnay and Pinot noir grapes. The fine and lingering beads are obtained when kept for at least 36 months in bottles containing second fermentation yeast.
Fruity notes and fragrance and nuances of spice blending with bread crusts in nose and white peach, tropical fruit, cardamom and ginger.
Hints of pastry flavours.
Fresh mouth-feel, lively and elegant effervescence which accompanies the lingering taste.
Excellent with aperitifs, sushi, seafood dishes, pizzas, vegetable aspic, cod with peppers and olives.
Further food pairings: with traditional dishes such as borage fritters, pork roast, buffalo mozzarella, Farindola pecorino cheese and caciofiore cheese from L’Aquila.
