100% Nero d’Avola

LOCATION
Sicily region in the area of Trapani (west part of the island)

VINEYARD
About 20 ha at an altitude of 400 mt above sea level where soil is calcareous-clavey and the influence of the Mediterranean Sea is quite evident. Growing of grapes without use of any pesticides or chemical agents. Hand-made harvest in the second half of August

VINIFICATION
Traditional fermentation of must for about 10 days with skins at 26° -28° C.

MATURATION
In temperature controlled stainless steel vats for 6 months then a short period in the bottle.

CHARACTERISTICS
Intense ruby red color; bouquet is spicy and fruity with notes of blackberry and mulberry. Intensely vinous.

ALCOHOLIC CONTENT
12.5 % vol.

SERVING TEMPERATURE
18 - 20 °C.

FOOD COMBINATIONS
Eggplant Parmigiana, red roasted meat and game but also tasty fish like tuna or sword-fish
