Vinification and refinement
The vineyard is located on the edges of Arno River on sandy soils rich in minerals and fossils of marine origin in one of the most vocated areas of Pisan hills at about 25 km from Tyrrhenian Sea.
After de-stemming and crushing, the grapes are transferred to a tank and left to macerate for a few hours (generally from 8 to 24 hours). The skins, floating to the tank top are then separated by gravity from the grape must, which is denser and remains at the bottom. During the contact time, the grape must is enriched by the skin pigments and aromas (it is therefore coloured pink). The grape must is then subjected to a racking process and, once clean, is fermented at a controlled temperature of between 17 to 20ºC. Therefore, once the alcoholic fermentation has been completed, the wine is fined and stabilised prior to the bottling.
Colour: Intense pink colour with purple notes.
Bouquet: On the nose evident bouquet of fruit, peach, plum and apricot.
Taste: On the palate the freshness and sapidity are the characteristics of this easy drinking wine.
Food pairings: Salads, fish courses and appetizers. Serve chilled.
